Cleaning Procedure (Shown with Pan Device option)
The DD104 should be cleaned daily at the end of production.
- Refer to Owner’s Manual for important safety information before using this equipment.
- Cleanings is a maintenance function and improper cleaning can affect machine performance and warranty coverage
- Remove components to wash in the sink according to the 3-sink method (Wash, Rinse, Sanitize)
- Components and machine can become sticky from residual oil left on parts if not cleaned immediately after use. This stickiness can build up and become un-washable using standard washing practices. If this occurs it is recommended to scrub down with additional oil before a standard wash. The new oil helps to remove the old sticky oil residue. To limit stickiness build up the DD104 can be lubed with Vegalube 1100 Special P Release instead of standard oil.
- Failure to clean system properly can result in improper functioning of the equipment and any troubleshooting should begin with ensuring system is clean and not sticky.
- Remove front guard panel by removing ring pins
- Properly remove hopper
- Unlatch all latches
- Lid then hinges back and stays in place. Lid is cleaned in place.
- Remove hopper gasket and clean
- Grip the top of the hopper and twist counter-clockwise to free the hopper and lift to remove
- Remove Rear Guard Panel by pulling the pin
- NOTE: The Rear Guard Panel will slide back on in the opposite direction when the DD104 is re-assembled after cleaning.
- Remove Dough Blow-Out Block
- Twist Dough Blow-Out Block clockwise to free and lift to remove
- Remove Dough Blow-Out Block air connection piece by pulling the two extendable pin out
- Remove Bowout Disc and O-Ring from the Dough Blow-Out Block and wash each separately
- Remove Knife Guide Plate
- Unscrew the four fastener knobs securing the Knife Guide Plate to remove the Knife Guide Plate
- Remove Knife
- Pull the U-Shaped Pin connecting the Knife to the Knife Mount to remove the Knife
- Remove Dough Block
- Pull the U-Shaped Pin connecting the Dough Block to the Block Mount to remove the Dough Block
- Remove Dough Step Pad (Single piece or all three pieces)
- Pad should be tilted sidewise to be removed and installed
- Take the Hopper, Hopper Gasket, Knife Guide Plate, Dough Cavity (recommend pulling out of block before putting in water), Dough Block and Pin, and Knife and Pin, Dough Step Pad to the sink to wash. The remainder of the machine is intended to be washed in-place
- Clean the Dough Block Area by wiping all surfaces and removing any debris or residual oil
- If area has become sticky apply oil first and scrub down, then clean with hot soapy water
- Clean the Pan Slot by pulling the Pan Slot Pin down to release the Pan Slot to swing open. Wipe all available surfaces and remove any debris or residual oil.
When cleaning the machine, please take care to avoid causing machine damage by heeding the following:
- Do not use harsh chemicals to clean the machine, especially sensor faces and the controller. Use only soap and water.
- Use soft items (rags, towels) to clean food surfaces (ex. Hopper and dough pockets) to avoid scratches that can create surface friction. Use soft items to clean sensor and controller surfaces to avoid damage from abrasion
- Do not pressure wash or use other methods not mentioned above.
